Chicken Bruschetta

I making a delicious Chicken Bruschetta for dinner tonight. It is a really easy meal to make and I am going to teach you how.

First you will need;

one pound of boneless skinless chicken breasts

one quarter cup of sweet basil

one quarter cup of oregano

two thirds a cup of Olive oil

two pounds of plum tomatoes

two table spoons of balsamic vinegar

one package of angel hair pasta

Preheat oven to 375 degrees

Peel and quarter the tomatoes and set on one side of a shallow baking pan. Cut chicken into strips and lay out evenly on other side of the baking pan in one layer. Mix basil, oregano, and olive oil together and brush half of mixture onto the chicken and tomatoes. Place baking pan in the oven and set aside the mixture for later. Bake for about 30 to 45 minutes depending on the size of your chicken strips. ( I like to make mine small for less cook time)

Boil pasta and drain. Remove pan from oven. Take the tomatoes and chop into smaller bite size pieces. (I also chop the chicken into bite size but it isn’t necessary) Mix chicken, tomatoes and juices from bottom of pan into the pasta along with the rest of the olive oil mixture and the balsamic vinegar and toss.

You can also sprinkle some Parmesan on this as well to taste.

Serve with garlic bread and salad as sides.

A nice chardonnay will compliment this as well.

Time to go make dinner

Well I am going to get off of here and go cook dinner. I am making a special dinner tonight for the wife since she has been working so hard. She loves Manicotti and I found a really good recipe for it a few days ago. I went to the store on the way home to get all of my supplies. Now I just have to put it all together and have it ready for when she gets home. So hasta la vista peoples.

Taking my lady out

I think I will take my wife out to dinner tonight. She has been really busy at work lately and needs a break. I help cook dinner on the nights I get home before she does, but I am willing to bet that she would be happier going out tonight. I might even take her for a couple of drinks and a little dancing if she wants. We both have to work tomorrow, but that doesn’t mean we can’t have a little fun and still be home in bed by eleven o’clock.

Dinner out

I am taking my wife out to dinner tonight. I am in the mood for the Outback Steak House. I have a sudden urge for a Blooming Onion, a Porterhouse steak and some Shrimp on the Barby. Don’t ask me why I all of a sudden got this urge, but I did. I know my wife will be happy we don’t have to cook dinner tonight. She has been working really hard this last week on a big project that has really drained her. I am going to surprise her with dinner and drinks so she will be able to relax.

Planning a night for her

So we all know that Valentines Day is coming and I thought I would plan a night for her and I this weekend.  It is going to be a few days early, but I know that she will really appreciate it. She is planning to go shopping on Saturday afternoon with the girls and wont be home till dinner time. I told her that I was going to cook dinner so I know she will be home in time. I am going to decorate the living room, dining room and bedroom with rose petals and really romance her. Dinner will be her favorite meal of Shrimp Alfredo, with a salad and garlic bread on the side.  Wine to go with it and then for desert, champagne and strawberries in the bedroom. I think that will work very nicely.
