The camping trip is set

We will be able to leave for our camping trip next Friday. I cannot wait to get to the great outdoors. We are taking a large group of people and will head to the mountains for the weekend. My wife and I will take both trucks so we can pull the trailer with the boat and the fourwheelers as well. I have everything ready to go, all we need to do this coming week is a little grocery shopping and that will be it.

My newphew is going with us as well and is bringing a couple of friends with him. I hope they will be ready in time. I am sure that they will be though, as they are all really excited about the trip too. I know that everyone is happy that winter has finally released it’s hold on us. One more week, then we are gone. I can’t wait.

Almost finished

I am almost finished with my mud truck. I have been working on it for so long, it seemed as if I would never finish it. Other then some cosmetic stuff I want to do, it will be ready to go mudding in time for spring. I am really excited about this, because I cannot wait to hit the mud pits. I am also condiering taking it down to Florida for the MuddyGras in Central Florida. It is one of the largest mudding get togethers there are. Of course, I will have to trailer it down there, but that is no problem either. We will make it one way or another. Here is a pic of the MuddyGras festival.

Mexican food

There is a great Mexican restaurant near our house that is kind of high end. It is not your normal taco joint, that is for sure. We always take a taxi when we go there, because they make the best margaritas. The problem is, the margaritas are huge. You barely taste the tequila, so you tend to think there isn’t that much in it. After about the third one, you know that there was more in it then you thought. We are familiar with it though, hence the taxi. When it’s that good, you make adjustments. Note to anyone who visits there; never drink more then three of their margaritas. You will regret it.

Midnight munchies

Okay, it’s way past midnight, but I am seriously hungry. You would think I hadn’t eaten in days. I am glad that we have some leftovers in the fridge. I just made myself a ginormous plate with broiled pork chops, brussle  sprouts and a baked potato. My wife is going to kill me for eating this much in the middle of the night, but I just can’t help it tonight. She is very picky about eating healthy and says that late night eating is bad for you. She generally knows what she is talking about, so I will take her word for it. That doesn’t mean that I will listen all the time though. I would really be in trouble if she saw what I put on my baked potato. The amount of cheese on it is almost obscene. Now you know just how happy I am to be eating this plate of food. Hehehe

Wedding flutes

As you know I am a self styled gourmet chef. By definition, a gourmet chef is highly skilled in delicacies and foreign dishes and excel in specialty dishes. In other words, they create. I create meals, I do not just cook. This makes me a bit of a snob when it comes to presentation of the meal as well. It has to look good. It has to be served with the right dishes etc. Wedding flutes are no exception and the girls decided to allow me to pick them out for the wedding, because I am so picky. They had almost chosen wine glasses instead of champagne flutes. I had to correct that quickly.
